When I was little, these fluffy yet crunchy apple pancakes were my definition of happiness. On lazy weekend mornings my mom used to make them for me, and as soon as they where ready we would eat them still hot, slightly dusted with vanilla sugar.

Now, it’s my turn to create memories for my daughters, and I think that memories made around the family table are the sweetest:) I don’t know if you realized that, but memory is often triggered by a familiar smell. That’s why a smell can bring us back in to a precious moment back in time. So when I was making these apple pancakes, the smell of baked apples mixed with butter made me feel as if I was four again. And looking at my girls devouring them just like I used to, made me feel simply happy.

But you don’t need to have kids to make them, especially that they are really easy and delicious alternative to a simple pancake.

What you’ll need :

2 egg whites

1 1/4 cup flour
1 cup milk
1 teaspoon baking powder
2 tablespoons sugar
2 egg yolks
3 medium apples

Butter for the pan( be generous)

Start by separating the eggs, and beat the egg whites until fluffy, then set them aside. Mix all of the remaining ingredients, and when well mixed, gently add the egg whites.

Add apples cut in slices. Mix.

Melt the butter on a pan, and place a spoonful of an apple pancake mixture. Don’t worry if it’s seems liquid, it’ll set.

Serve them hot, with maple sirup, or delicately powdered with icing sugar. Enjoy !
