I could have pancakes every day of the week, and I don’t think I would ever get bored with them; and these pancakes here are seriously so easy, perfect and fluffy every time we make them that they have become a staple in our home lately!
I love them best with the cream cheese vanilla souse and a home-made berry souse, or any type of fresh fruits. And while my kids are loving these pancakes with fruits and maple sirup on top, my hubby is a simple pancake and maple sirup fan – but we all agree that these are the fluffiest and perfect pancakes ever!
So if you’ve been looking for an easy and foolproof recipe for your perfect weekend breakfast, then here it is!
What you’ll need to make the fluffy pancakes :
- 1 cup of milk
- 1 egg
- 2 tbsp melted butter
- 2 tbsp sugar
- pinch of salt
- 2 tbsp baking powder
- 1 cup flour
What you’ll need for the cream cheese vanilla souse:
- 2/3 cup softened cream cheese
- 1/4 milk
- 1/4 icing sugar
- 1 tsp vanilla extract
What you’ll need for the berry fruit souse:
- 1 cup frozen berries
- 2 tbsp sugar
How to make pancakes: In a medium bowl, mix all the dry ingredients: flour, baking powder, sugar and salt. Set aside. In another bowl mix together melted butter with milk and egg. Then gently and slowly add the dry ingredients and mix well together.
On a large pan melt some more butter, and bake your pancakes untill golden.
We usually keep them in the warm drawer of our oven to keep them warm and serve them all at once.
How to make cream cheese vanilla souse: Mix all the ingredients in your kitchen aid. Just make sure that your cream cheese is really soft!
How to make berry fruit souse: heat all the ingredients in a small pan until hot, or microwave for around 1 minute! I must say I usually go for the easiest second version!
Now if only every-morning could be a weekend morning, and if only I could have these pancakes every day!
