Overnight maple chia oats, simple and healthy breakfast, kids approved!

You know what I love about Mondays? The overnight maple oatmeal chia pudding waiting for me in the fridge! It’s my secret for those busy mornings when everyone slept a bit too long and nobody is in the good mood. And since it’s both a heathy and easy breakfast, as a super yummy one, I think it’s a win-win for everyone!

Now, you can keep it simple, or make it more fancy by adding some fresh ( or frozen) fruits and some granola for that extra crunch ( you can click here to see my home-made granola, that once crushed in pieces is really delicious with this maple chia oats! ) or you can use a bit of a store-bought one. I won’t judge you!

Also, my portion is big enough to feed two small kids and two adults two days in a row (since these maple chia oats are very fridge friendly, and can be kept on hand for up to four days!) I simply heat it in the microwave and serve.

What you’ll need:

2 cups of oats
1 cup chia seeds
2 table-spoon maple syrup

4 cups milk (can be almond!)

1 cup fruits ( mix berries, fresh or frozen, or apple and pear chunks)
1 cup granola

In a bowl, mix together chia and oatmeal. Take two medium mason jars and fill them with the chia-oatmeal mix. Add equal amount of milk and maple syrup. stir, and cover with fruits. Leave to refrigerate overnight. In the morning (after heating up) add a bit of granola for that extra crunch!

And some days, if I have still some chia oatmeal left on the third day, I’d use it as a base for a fruit and oat smoothie!( Just add more fruits, a bit of milk or yogurt and blend together in a blender!)

Overnight oatmeal crumble baked French toast

This amazing overnight oatmeal crumble French toast is the best crowed pleaser ever !

Do you ever need to feed a crowd? It doesn’t happen a lot here, but sometimes I do host a brunch at home. And what’s the best way to be a great hostess? I’d say make these overnight oatmeal crumble French toast! It’s like dessert for breakfast ! And it won’t take too much of your time (nor money).

So this is basically a delicious baked French toast, with berries and some oatmeal crumble on top. It’s pretty amazing honestly. And the best part is that its pretty easy to make! Here’s how:

1 loaf white bread
6 eggs
1 cup milk
1 cup cream
1/2 cup icing sugar
1 teaspoon vanilla extract
1 cup frozen mix berries.

Oatmeal crumble:
1/2 cup flour
1/2 cup brown sugar
1 cup oats
1 tsp. cinnamon
1/4 tsp. salt
1/2 cup cold butter, cut into pieces

Cut bread into cubes and place them in to a baking dish. Mix together eggs, milk, cream, icing sugar and vanilla extract, and pour over bread. Make sure there’s no dry bread spots, and that every little piece of bread is covered. Then sprinkle evenly frozen berries (I used a mix of strawberries, blueberries and raspberries). Cover with foil and let it soak overnight.

Now prepare your crumble:
Using your hands ( though you can also use a mixer) combine together the flour, brown sugar, oats cinnamon, salt and butter. Set aside (in a plastic container or ziplock) and let it chill overnight too.

Baked French toast

In the morning, when you take it out of the fridge, simply scatter the crumble over it, and bake all together for around 40 minutes.

Serve hot or cold, it’s delicious in both forms!

You could also try making it with apples or pears on stead of berries, it would definitely be amazing as well!

Angel food cake the easy way


This is the most fast and easy, yet extremely delicious angel cake that I have ever had.And I had many.It’s my mother-in-low and one of her old french cookbooks who’s behind this amazing cake, so I’m only sharing her secret with you 🙂

5 eggs
1 cup of pastry flour
1 cup of sugar
1 teaspoon of baking powder
1/2 teaspoon of salt

whipped cream
wild blueberries
wild raspberries

In your mixer (Kitchen Aide) mix eggs adding slowly sugar.When it’s thick add slowly the blend of flour, baking powder and salt. Bake on 350 F for around 45 min. Make some whipped cream.When your cake is ready add whipped cream and fruits. Cherish your summer!

Healthy berry&maple syrup smoothie


Another summer day, another way to enjoy seasonal fruits.I guess every one likes smoothies, and there is so many ways of doing them: with ice cream, milk, yogurt, just fruits, with added sugar.. Well my today’s version is actually on the super healthy side.But still so yummy and refreshing !

Organic natural yogurt
Maple syrup

I made it for two, so I had about a 1/4 of a cup of each fruit, plus 3 spoons of yogurt, and one of milk.Use as much maple syrup as you feel works best for you. Don’t worry, it hes some good micro-elements 🙂
