Easy 3 ingredient recipe for peaches and cream ice cream

Summer is all about the sences- how the sun kisses your skin, how the ripe peach smells and the homemade ice cream tastes- it’s all unforgettable!

Best thing- you don’t need an ice cream machine to make it, and all you need are three simple ingredients! If only adulting would always be as simple as making these ice cream!

What you’ll need:

  • 1 cup whipping cream
  • 1 can sweetened condensed milk
  • 6 ripe peaches

Start by peeling the peaches and then cutting them in medium chunks. ( Leave one on the side for decorating the ice cream) Then, using a potato masher, mach them in a mushy pulp ( ok this does not sound yummy, but if your peaches are really fresh and ripe it will smell delicious!) in a large bowl. Try to pour out excessive liquid ( but don’t throw it away! It’s a freshly squeezed peach juice, my baby loved drinking it!) Now set aside.

Whip the cream ( you can add a small teaspoon of sugar)

Now very slowly mix the whipped cream, with the condescended milk and the peach pulp.

Pour into a glass dish, add slices of the peach you have set aside before, and freeze overnight!

Serve in an ice cream cone or in a bowl and enjoy on a hot summer day!

Peach Cinnamon Bagel French Toast

“When you wake up in the morning, Pooh,” said Piglet at last, “what’s the first thing you say to yourself?”

“What’s for breakfast?” said Pooh. “What do you say, Piglet?”

“I say, I wonder what’s going to happen exciting today?” said Piglet.

Pooh nodded thoughtfully. “It’s the same thing,” he said.”

My love language is breakfast at all times, and just like Pooh I like it on the sweet side. Preferably with a serving of warm, sweet and comforting french toast bake, like this Peach Cinnamon Bagel French Toast! Best thing about this dish is that thanks to the use of cinnamon raisin bagels it’s super easy to make, leaving you time to scroll through your favourite feed – or chase toddlers- whatever your morning routine is!

Also, you could do all the preparation the night before, and just pop it in the oven after waking up! Which makes for a perfect solution when hosting family or friends!

All you’ll need is:

  • 4 eggs
  • 4 cinnamon raisin bagels
  • 1 cup milk ( or 35% cream )
  • 1 teaspoon vanilla essence
  • 1 spoon brown sugar
  • 3 ripe peaches ( or frozen )
  • 1 cup blueberries ( optional)

Cut the bagels in fours and place them in the baking dish. Mix eggs with milk ( or if you want a truly decadent french bake go for cream!) , vanilla essence and sugar, and pour the mixture over the bagels. Press the bagels in to the mixture so they can soak in all of it. Meanwhile cut peaches in slices, and place them in between bagels. Add blueberries and bake on 350 F for around 35- 45 minutes.

Remember to serve your Peach Cinnamon Bagel French Toast still warm, and preferably on a lazy weekend morning while surrounded with friends and family! Enjoy

No bake chocolate cups

no bake chocolate cups

One of the things that have marked my pregnancy so far are sugar cravings. And not just any sugar cravings, but very specific dessert ideas. And out of one of these pregnancy dreams these no bake chocolate cups were made. I woke up one day wanting chocolate ganache mixed with chocolate cheesecake and raspberries – and this is when I came up with these chocolate cups! They are more chocolaty than a cheesecake would be, but still very creamy thanks to all the cream. And they are a no bake dessert – which is a huge plus when you’re an impatient pregnant lady like I am!

no bake chocolate cups

What you’ll need:

  • 1 & 1 tablespoon cup heavy cream
  • 1 1/2 cup chocolate chips ( milk or dark- whatever you prefer)
  • 1/2 cup cocoa
  • 3 tablespoons maple sugar
  • 1 tablespoon vanilla extract
  • 1/4 cup teaspoon butter

Crust

  • 1 1/4 graham crackers
  • 1/4 melted butter

Toppings:

  • fresh raspberries
  • maple sugar

Prepare a muffin pan with paper liners. Then start by combining together melted butter and graham crackers for the crust. Once well mixed together, add around of one teaspoon of the graham cracker mixture to each muffin tin. Press with your fingers so it’s not in crumbles.

Now take a small pot and on a very small heat gently mix together cream and chocolate until chocolate is melted. Stir constantly, and then slowly add cocoa, maple sugar vanilla extract and soft butter. Keep on stirring until everything is well mixed together. Let it chill for a couple of minutes, and then pour over the graham cracker crust. Then leave the cups in the fridge to completely cool down and set.

  • brownie base ( you can do your brownies from scratch using your favourite recipe, or make a box brownies, like I did! )
  • 2/3 cup pumpkin pie filling
  • 1 egg
  • 2 packages of cream cheese
  • 1/3 cup brown sugar
  • 1\4 cup chocolate chips

Prepare a brownie base, don’t bake it yet.

Once the Pumpkin Cheesecake Brownie is cooled down, melt your chocolate chips, and pour them over ; I usually use a small zip bag with a tiny hole, to get a thin layer.

Every spring I wake up one day, and decide it’s enough: enough of artificial sugar, enough of comfort food on repeat, and enough of store-bought snacs! Easy matcha brownies

easy and delicious, matcha brownies that are too good not to share!

I’m a huge fan of brownies, and I think there’s nothing better for warming up on the cold winter day, then indulging a little in a chocolaty and comforting brownie slice, accompanied by your favorite hot mug of tea. And recently I discovered matcha green tea, with its distinctive taste and amazing health benefits. So it’s only logical that I have decided to put these two flavors together!

And if you don’t know matcha tea yet, then all you need to know is that its a finely grounded powder of specially grown and processed tea, that is high in antioxidants, enhances calm, boosts memory and concentration and fortifies the immune system! Now, I think this is enough reasons to try it, am I right?

So, this is rather an adult type of cake, with its slightly bitter matcha taste. Though one of my daughters still loved it, and actually was fascinated by its green color! But other one of my daughters not so much .. So I guess it’s best to make it for your adult friends, and not necessary for your kid’s birthday party!
