Like every fall, pumpkin spice everything takes over the world, and I couldn’t help but share this amazing Pumpkin Cheesecake Brownie recipe with you, along side a group of my favorite blogging friends! From pull apart pumpkin cinnamon rolls, to a healthy pumpkin spice snack, we got you covered! You’ll find all the recipes at the end of this post!

Coming back to my Pumpkin cheesecake brownies: they have been on repeat in here since late summer! It’s a perfect dessert for both pumpkin-everything-lovers, as the more reserved, only falling for chocolate types ( like my younger daughter).

Also, and that’s a big plus in my opinion, it’s super easy recipe, that you can whip up on a weekday afternoon! Even with kids around! Actually, let them help! And by help, I mean let them lick all the spoons!

What you’ll need:

  • brownie base ( you can do your brownies from scratch using your favourite recipe, or make a box brownies, like I did! ) 
  • 2/3 cup pumpkin pie filling 
  • 1 egg
  • 2 packages of cream cheese
  • 1/3 cup brown sugar
  • 1\4 cup chocolate chips 

Prepare a brownie base, don’t bake it yet.

Mix the soften cream cheese with pumpkin pie filling, brown sugar and one egg. Mix it all together well, and pour over the brownie base. Now bake for around 35 to 45 minuets on 350F. Don’t over bake!

Once the Pumpkin Cheesecake Brownie is cooled down, melt your chocolate chips, and pour them over ; I usually use a small zip bag with a tiny hole, to get a thin layer.

Serve and enjoy! Jut be carful not to eat them all at once! They disappear very fast!

You know I’m all about easy and yummy desserts, and so today I have teamed up with Wayfair to bring you this amazing, no-bake pumpkin cheesecake and free Halloween printable cupcake toppers, that you can use to decorate your own dessert!

Honestly, I love cheesecakes in any form, but this pumpkin cheesecake is something special! It’s so easy to prepare, it’s amazingly creamy and rich and its ready in less than 20 minutes!

And since I love fun and modern Halloween decor, I decided that a set of cute and not too spooky cupcake toppers would be perfect for this no bake pumpkin cheesecake! You can download them at the end of this post!

Also, this recipe is perfect for mason jars, and you can even prepare it overnight! That way you can have it ready in the fridge for all your Halloween gatherings, and have one less thing to worry about! And I think that preparing two different serving options, one for adults, and one for kids, is a great way for making it kid-friendly.

I even made two topping options, one with whipped white chocolate cream, and one with simple whipped cream ( since I know a very special someone who doesn’t like white chocolate).

What you’ll need:

For the crust:

– 1 1/2 cup graham cracker crumbs

– 3 table spoons margarine ( or butter)

– 3 tablespoons brown sugar

– 1 teaspoon vanilla extract

– 1 teaspoon cinnamon

For the pumpkin cheesecake filling:

– 2 packages of cream cheese ( in room temperature)

– 1 cup of pumpkin puree

– 1 teaspoon of pumpkin spice

– 1 cup sugar

For the whipped white chocolate cream:

– 1 cup whipping cream
– 1/2 cup white chocolate chips

Optional, only whipped cream :

– 1 cup whipping cream

– 2 tablespoons sugar

Start by combining all of the ingredients for the crust ( remember that the margarine should be really soft). Mix it well together, and press at the bottom of your jars. Set aside.

Now it’s time for the pumpkin cheesecake filling. First beat the cream cheese until it’s smooth, then add sugar, mix some more, and then add the pumpkin puree and pumpkin spice.
(You could also use pumpkin pie filling, and skip the sugar and spices. Though I prefer to use the pumpkin puree as it lets me be in control of sugar and the amount of pumpkin spice.)

For the whipped white chocolate cream, beat the whipping cream without any sugar, melt white chocolate chips, and in a bowl ( not in a mixer) combine them together slowly with a spoon. Don’t over mix it as it could separate.

Or whip some whipping cream with sugar.

Pour the pumpkin cheesecake filling over the graham crust layer, and top it with the white chocolate whipped cream. Decorate with a Halloween cupcake topper, and enjoy!

This moist, full of crunch pecan chocolate pumpkin cake is so easy to make, and so satisfying ! I made it last week, and it literally disappeared in no time! I’ve coated it with cinnamon cream cheese frosting, because recently I feel like there is nothing better than cream cheese :). And celebrating fall comes with baking cakes, right?

What you’ll need for the chocolate pecan pumpkin cake :
3 cups flour
1 teaspoon baking powder
2 cups sugar
1/4 cup melted butter
1 can spiced pumpkin pure
4 eggs
1 cup pecans
1 chocolate chips

Why you’ll need for the cinnamon cream cheese frosting :
1/2 cup Cream cheese
1/4 cup Soft butter
2 spoons Sugar
1 teaspoon Cinnamon

Start by mixing sugar with butter, then slowly add the flour with baking powder, eggs and in the end the pumpkin pure. When it’s all well mixed togheter add pecans and chocolate chips.
Bake on 359F for around 45 min.

When your cake is cooled down, you can frost it. Don’t try doing so when the pecan pumpkin cake is still warm, because your frosting will melt.

Honestly it’s a perfect fall snack :). I feel like live is good as long as there is warm fall weather, colourful leaves, and pecan chocolate pumpkin cake :). Can you tell I’m not ready for winter? 😉

Easy Halloween craft : pumpkin friends

I bought some mini pumpkins and they seemd to be perfect for a Halloween craft, and since my daughter loves to play with little figurines, I decided to make with here these pumpkin friends that she can play with. With Halloween being on top of her head recently, I made her day with those little pumpkins! I think that this girl of mine is constantly thinking about desserts and sweets, so no wander that Halloween is her favourite day (mine too actually ). You see, were I grew up we didn’t had Halloween, so I’m like a kid now, decorating, dressing up, and hoping for candies! But since I’m not that much in to creepy and scary Halloween decoration, my number 1 choose for crafts and decoration are pumpkins :).

I helped her draw the pumpkin smiles, but if your kid is a bit older I’m sure they can make a pumpkin friend like this with out any help of an adult. It’s really a super easy Halloween craft!

Here is what you need :

Little pumpkins
Plastic eyes
Yellow pipe cleaner
Black marker

Now let your kid glue the eyes on to these little pumpkins, insert the pipe cleaner hands and corns, and if they can, let them draw the missing details of their little pumpkin friend.

After we finished our pumpkin friends, Lili was pretending that it’s a pumpkin family, then she decided to wash them with a cloth, and then dry them in the garden.. So in the end they needed a new pumpkin face ! But she was taking care of these little pumpkin friends for like an hour!

So I think that this little Halloween craft was a success! Only 10 minutes of making a craft with mom, and then an hour of independent play with her pumpkin friends ! That’s what I like 🙂
