Chocolate blondies

These blondie bars are full of chocolate chunks and are made with one secret healthy ingredient, making them lighter, better and more moist !

Sometimes in life you just find yourself with overload of chocolate bars and candies. Like after Halloween. There’s option one, eating it all , or another one, which is making a blondie with it. And of course, we love baking at our home, so this is always the option that we prefer!

These blondies are the best

And I love blondies, but mixed with chocolate candy bars they get a bit too heavy. That’s why I made this one with apple sauce (also because I was out of eggs, but let’s keep they a secret!). And honestly it works really great together ! It’s just difficult to decide if this is a healthy treat or not. Whatever you decide, it makes for a great family friendly dessert!

What you’ll need :

2 cup flour
1/2 teaspoon baking powder
1/2 cup brown sugar ( I’ve cut on the sugar, but you can make it 1 cup)
2 cup apple sauce ( for a classic blonde 2 eggs instead)

2/3 cup of soft butter

2 cups of chocolate bars and candies cut in pieces

Mix the dry ingredients together, add apple sauce, and butter, and in the end chopped chocolate bars. Bake for around 40 min on 360F. Once cooled down, keep in the cold and dry place.

The best blondies ever

And what are your favourite blondies, or brownies?

Oatmeal chocolate chip banana bread

Banana bread bars

I was craving a chocolate banana bread for weeks, and these oatmeal chocolate chip banana bread bars are a perfect dessert/snack/treat for the colder days! They are filling, comforting and easy to make. You could freeze them, add to your school lunches, or simply serve as a dessert with a cup of milk.

Since I never really baked with oats, I wasn’t sure what to expect. Will it became gooey or crunchy? Well, a bit crunchy is the right answer, and so much more satisfying too! Also, oats are considered as one of the super foods, and their health benefits are really astonishing! So I think that these bars count almost as healthy snack!

Banana bread

And thanks to this recipe I finally managed to convince my older daughter to eat bananas! She used to love them as a baby and a toddler, but for last couple of month, as soon as there would be a little-tiny–mini-almost-invisible brown spot, she wouldn’t eat it. Up to the point, when she would just say that she doesn’t like bananas anymore! Though it was clearly just her obsessing over brown spots. And you should see my face, I mean, really, you don’t like bananas?! Bananas?? So finally, thanks to these lovelies, she decided that bananas are cool again, and even asked for some real ones for breakfast the other day! Victory!

Here’s what you’ll need:

1 cup cake flour (or 1 cup flour and 1/2 teaspoon baking powder)
1/2 sugar
1/2 cup melted butter
2 eggs
2 mashed bananas
3/4 cup oats
1/2 cup chocolate chips

Mix flour, sugar and butter together, then add eggs and mashed bananas. Add oats and chocolate chips, and bake for around 40 minutes on 350F. Enjoy!

Peanut butter and chocolate chip cookie bars

Peanut butter & chocolate chip cookie bars

When I need something comforting, I make these peanut butter and chocolate chip cookie bars. They are soft, moist and so satisfying. And since I switched to natural & no sugar & no fat added peanut butter, it also feels like they are a healthy snack :).

And believe me when I say that these yummy bars take less than a half an hour to make! Isn’t it funny, how a half an hour of baking seems to go by really fast, while a half an hour of folding laundry feels like an eternity.. (If you don’t feel the same, and you love folding laundry, good for you! ).

Coming back to these amazing peanut butter and chocolate chip cookie bars, I know you’ll love them! Here is what you’ll need :

1/2 cup melted butter
1 large egg
1/2 cup light brown sugar
1/4 cup granulated sugar
2/3 cup Natural Peanut Butter
1 1/4 cups all purpose flour
1/2 teaspoon baking powder
pinch salt
1//2 cup chocolate chips

Peanut butter & chocolate chip cookie bars

Mix melted butter with the sugars and egg, and then add flour, baking powder and salt. When all is well mixed together add chocolate chips. Spread in a shallow baking dish and bake for around 25 minutes on 360 F, or until baked on the sides but still soft in the middle.

Peanut butter & chocolate chip cookie bars

You can have your peanut butter and chocolate chip bars warm with a bit of vanilla ice cream.. Or you can wait until they cool down and then serve them as a perfect weekday dessert ( or snack, or breakfast.. I won’t judge you).

Cookie dough Oreo bars

I’ll be very honest with you here. It’s not a healthy dessert! So if you’re struggling with diabetes, just stop reading now, and go check out one of my healthy desserts. However, if you’re looking for a ridiculously decadent dessert that’ll knock your guests socks off, look no further !

These cookie dough Oreo bars are one of these addictive, gooey, chocolaty and crunchy desserts, that your guests, family, even your neighbour, will love. I’ve made them last weekend and suddenly I’ve became the-best-daughter-in-law-ever! And if I wouldn’t be already married to my husband, he would have literally proposed to me. With his mouth full of this cookie dough Oreo bar. Yes, they are that good.

So now you’re probably thinking that if these cookie dough Oreo bars are so crazy delicious then they must be fairly complicated. No. They really aren’t. And there is no baking involved :). Here is what you need :

1/2 cup soft butter
3/4 cup brown sugar
1 cup flour
1 cup Oreo baking crumbs
1 cup white chocolate chips
1 can of sweetend condensed milk

For the Oreo crust:
1 1/4 cup Oreo baking crumbs
1/4 cup melted butter

Start by preparing the Oreo crust. Just mix the Oreo crumbs with melted butter, and press them firmly to the bottom of your baking dish. Then using your electric mixer, mix the brown sugar with soft butter, then add slowly the flour, and Oreo baking crumbs. Then slowly pour the condensed milk, and in the end chocolate chips. Now pour your sticky mixture on top of the Oreo crust, and let it refrigerate a couple of hours. Cut using sharp knife.

You can even freeze them once they’re cut in to bars, with sheets of parchment paper in between. They are even better cold!

Enjoy them with cold milk or hot coffee :). I know you’ll love them :)!
