Every year, as soon as the days start feeling as bit chillier and the fall starts peaking inn, we go apple picking with the family! And every year we end up with way too many apples! So this year, I decided to make something more than just a cake, something that I could pop in the fridge, something easy to make and of course delicious. I had some peaches on hand too, so here’s what I came up with: Chunky Apple and peach compote. With a subtile hint of vanilla, and a little bit of texture it’s the perfect accompaniment to your morning toast. And it;s even more amazing paired with some vanilla yoghurt and granola. Because mornings are just so much better when they start with an Apple and Peach comte parfait!
Here”s all you need:
5 big apples
4 large peaches
1 teaspoon vanilla essence
3 table spoons brown sugar
Cut all the fruits in small cubes. Place them in a medium pan, add vanilla essence, brown sugar, and give it a stir. Cook over medium heat, occasionally steering doer around 10 minutes. Then turn down the heat, and cook for around 20 minutes on low heat.
Let it cool, and place in a closed container. You can keep it for up to two weeks in the fridge. Try it over fresh bread with butter or over a raisin brad toast! It’s so delicious!
Or you can make a parfait! Because nothing say’s “have a great day” better than Parfait! And coffee of course, let’s not forget about coffee!
The seson for pomegranates is on, and what a better way to enjoy this amazing fruit than by making my super easy pomegranate & whipped ricotta parfait ? I know, you must be thinking that I got payed by a ricotta lobby, to present one recipe after another, but unfortunately I wasn’t ;). I just love this creamy and rich cheese that whipped with a bit of cream and sugar becomes a fluffy incarnation of heaven!
And the best part is that this recipie is perfect for cooking with kids! They can crush the cookies, pour the whipped ricotta in to glasses and add pomegranate seeds. If they won’t eat the half of it :).
What you’ll need:
1 cup ricotta cheese 1 cup whipping cream 1/4 cup sugar ( or a bit more) 1/2 teaspoon vanilla extract
Start by whipping the cream with sugar, then when it’s whipped add ricotta cheese and vanilla extract and mix it well. When it’s all nice and fluffy, put it in a bowl. Open the pomegranate : I suggest doing it in a bowl of water, that way all the seeds will stay on top, and you’ll avoid a huge mess!
Now let your little helper put it all together. Crush the graham crackers in to pieces, put them on the bottom of a small glass, add the whipped ricotta, pomegranate seeds, some more graham crackers and more whipped ricotta.
Eat it fresh, because the pomegranate doesn’t stay fresh long once open!
It’s so easy to make, but it will definitively impress everyone during this holiday season!
It’s the season for peaches! Nothing beats the taste of a ripe, dripping with juice peach. And if you add some whipped mascarpone cream..Yum! This is one extremely easy dessert, that will please even the most difficult guests :). I prepared a version for adults and one for kids. The peach parfait for adults was made with peaches that where marinated with white rum and maple sirup. But if you’re not in to rum you can stick to the kid version, it’s still delicious!
Around 4 big ripe peaches 1/4 cup maple sirup 1 shoot of white rum ( adult version )
1 cup mascarpone cheese 1/2 cup whipping cream 1/4 cup sugar
Cut peaches in to small cubes, add maple sirup and white rum ( if you’re preparing the adult version ). Set aside. Whip cream with sugar. Add mascarpone and mix it until it’s smooth and fluffy. You can add some more sugar, if you like it sweeter. Now place peaches in a tall glass, and top with whipped mascarpone and shredded almonds. Enjoy !
