One of the things that have marked my pregnancy so far are sugar cravings. And not just any sugar cravings, but very specific dessert ideas. And out of one of these pregnancy dreams these no bake chocolate cups were made. I woke up one day wanting chocolate ganache mixed with chocolate cheesecake and raspberries – and this is when I came up with these chocolate cups! They are more chocolaty than a cheesecake would be, but still very creamy thanks to all the cream. And they are a no bake dessert – which is a huge plus when you’re an impatient pregnant lady like I am!

What you’ll need:

  • 1 & 1 tablespoon cup heavy cream
  • 1 1/2 cup chocolate chips ( milk or dark- whatever you prefer) 
  • 1/2 cup cocoa
  • 3 tablespoons maple sugar
  • 1 tablespoon vanilla extract
  • 1/4 cup teaspoon butter

Crust

  • 1 1/4 graham crackers
  • 1/4 melted butter

Toppings:

  • fresh raspberries
  • maple sugar

Prepare a muffin pan with paper liners. Then start by combining together melted butter and graham crackers for the crust. Once well mixed together, add around of one teaspoon of the graham cracker mixture to each muffin tin. Press with your fingers so it’s not in crumbles.

Now take a small pot and on a very small heat gently mix together cream and chocolate until chocolate is melted. Stir constantly, and then slowly add cocoa, maple sugar vanilla extract and soft butter. Keep on stirring until everything is well mixed together. Let it chill for a couple of minutes, and then pour over the graham cracker crust. Then leave the cups in the fridge to completely cool down and set.

Top your chocolate cups with fresh raspberries or maple sugar – or both! And if you’re feeling extra special, serve them with a bit of vanilla ice cream on the side – I promise you’ll love them!

Easy matcha brownies

easy and delicious, matcha brownies that are too good not to share!

I’m a huge fan of brownies, and I think there’s nothing better for warming up on the cold winter day, then indulging a little in a chocolaty and comforting brownie slice, accompanied by your favorite hot mug of tea. And recently I discovered matcha green tea, with its distinctive taste and amazing health benefits. So it’s only logical that I have decided to put these two flavors together!

And if you don’t know matcha tea yet, then all you need to know is that its a finely grounded powder of specially grown and processed tea, that is high in antioxidants, enhances calm, boosts memory and concentration and fortifies the immune system! Now, I think this is enough reasons to try it, am I right?

So, this is rather an adult type of cake, with its slightly bitter matcha taste. Though one of my daughters still loved it, and actually was fascinated by its green color! But other one of my daughters not so much .. So I guess it’s best to make it for your adult friends, and not necessary for your kid’s birthday party!

All you need:

– 1/2 cup canola oil
– 1 cup sugar
– 1 teaspoon vanilla essence
– 3 eggs ( separated yolks from whites)
– 2/3 cup flour
– 1 cup dark chocolate chips ( melted)

– matcha green tea

Beat up the egg whites in a mixer, and set aside.

In a standing mixer combine together sugar, oil, vanilla essence and egg yolks. Add melted chocolate and then add flour. Once it’s all well blended, add slowly egg whites.

Pour on a prepared baking sheet, and bake on 350F for around 20-25 minutes. Don’t over bake!

Let your brownie cool down completely, and then dust them with matcha green tea. Don’t use too much of it though, as it can be too bitter!

Who doesn’t like some delicious festive cookies to munch on, while dressing up the Christmas tree? Or organizing a cookie swap party? Or gifting friends and family with a batch of home-made goodness? Nobody, right? So today I have these Peppermint and White Chocolate Sugar Cookie recipe for you, perfect for all of the above! Although, it’s more of a cookie hack to be honest.

Of course, the best sort of cookies, are the ones that only grandma used to make – because of course noting is as good as an old family recipe passed through generations of passionate bakers!

Except, that we don’t always have time to make that big batch of perfect home-made cookies. All the cutting and baking is definitely fun, but sometimes between work and home it’s just not happening.

So with this cookie hack, nobody will know you didn’t actually bake these cookies. Or you can tell them the truth, and I’m sure everyone will still love these! Because these melting in your mouth shortbread cookies, mixed with sweetness of white chocolate and the crunch of the peppermint candy cane, are simply delicious!

And it’s a perfect treat for a snowy day, and one of my families favorite too. You can even involve the kids in making these, they’ll be great little helpers! My daughters loved dipping them in white chocolate and sneaking some right away!

Oh, and you can even prepare them ahead of time, and freeze them for up to a month!

Easy and puffy soft sugar cookies recipe , so delicious and uncomplicated!  And once frosted with this vanilla cream cheese frosting, they simply melt  in your mouth!

What I love the most about winter weekends, is that we can stay in our pajamas all day and bake cookies together. And one of my favorite recipes is this one here, for perfectly puffy and delicious holiday soft sugar cookies!

These cookies are melting in your mouth, so easy to make, and frosted with delicious and simple vanilla cream cheese frosting! Pure winter perfection, if you ask me!

And, I really find that cold mornings are meant to be spent in comfy and cozy onesies while making a mess in the kitchen with kids. And my both daughters, they just love helping me with baking! I let them mix all the dry ingredients together, and then they choose their cookie cutters. And let me tell you, we have a real collection of cookie cutters now : forest animals, Xmas trees and snowman, little hearts and geometric shapes! But for little hands it’s easier to operate smaller cookie cutters, so we stick to these mostly.

And while the weather outside might be dreadful and cold, I make sure we’re cozy and warm, in our winter fleece pajamas, onesies and cozy winter slippers from Giant Tiger. Actually my girls love their onesies so much they want to wear theirs all day, and not only in the morning! ( And they might have been wearing their onesies to groceries the other day.. But I don’t blame them, they’re so cozy and soft!) While me, I love to have some soft flannel pyjama pants and micro polar on me, and yes, I love winter prints too! Having some nice pj’s and slippers make getting up early on weekends a bit easier! ( because #momlife! )

So while we’re all cozy and warm, we make cookies and listen to Xmas songs, because that really makes everything more cheerful!

And here’s what you’ll need to make your soft sugar cookies:

For the Holiday Soft Sugar Cookies:

– 2 cups sugar
– 1 cup softened butter
– 3 eggs
– 9 teaspoons of milk
– pinch of salt
– 5 cups flour
-5 teaspoons baking powder

For the Vanilla Cream Cheese Frosting:

– cream cheese package
– 1 1/4 cup sugar
– 2 teaspoons vanilla extract
– drop of food coloring

Preparation:

Mix the dry ingredients separately in a bowl. In a mixer, combine softened butter, eggs sugar and milk. Once all is well blended, add dry ingredients. Mix slowly together. Divide the dough in two. ( Since it’s a recipe for at least two big sheets of cookies, I usually work with first batch while the other half of my dough refrigerates. You can keep in a fridge for up two 2 days, if you feel like finishing your cookies a bit later.)

Roll and cut! Have fun with shapes, or use a glass to cut out simple circles like my grandmother used to do!

Once they are ready bake, set your oven for 350F and bake for around 10 minutes. If you want them to be really soft and puffy they can’t get brown! Not even a little!

Prepare vanilla cream cheese frosting: Mix all the ingredients in a mixer, and blend well together. Add a drop of food coloring.

Let them cool down completely before frosting.

Frosting hack: use a small zip bag, fill it with frosting, cut a tiny hole, and then frost!

And so even though I’m not the biggest fan of cold winter months, I think that as long as we have someone to snuggle and make cookies with, then these Canadian winters of ours are not that bad after all!

Honestly, I love cheesecakes in any form, but this pumpkin cheesecake is something special! It’s so easy to prepare, it’s amazingly creamy and rich and its ready in less than 20 minutes!

Also, this recipe is perfect for mason jars, and you can even prepare it overnight! That way you can have it ready in the fridge for all your Halloween gatherings, and have one less thing to worry about! And I think that preparing two different serving options, one for adults, and one for kids, is a great way for making it kid-friendly.

I even made two topping options, one with whipped white chocolate cream, and one with simple whipped cream ( since I know a very special someone who doesn’t like white chocolate).

What you’ll need:

For the crust:

– 1 1/2 cup graham cracker crumbs

– 3 table spoons margarine ( or butter)

– 3 tablespoons brown sugar

– 1 teaspoon vanilla extract

– 1 teaspoon cinnamon

For the pumpkin cheesecake filling:

– 2 packages of cream cheese ( in room temperature)

– 1 cup of pumpkin puree

– 1 teaspoon of pumpkin spice

– 1 cup sugar

For the whipped white chocolate cream:

– 1 cup whipping cream
– 1/2 cup white chocolate chips

Optional, only whipped cream :

– 1 cup whipping cream

– 2 tablespoons sugar

Start by combining all of the ingredients for the crust ( remember that the margarine should be really soft). Mix it well together, and press at the bottom of your jars. Set aside.

Now it’s time for the pumpkin cheesecake filling. First beat the cream cheese until it’s smooth, then add sugar, mix some more, and then add the pumpkin puree and pumpkin spice.
(You could also use pumpkin pie filling, and skip the sugar and spices. Though I prefer to use the pumpkin puree as it lets me be in control of sugar and the amount of pumpkin spice.)

For the whipped white chocolate cream, beat the whipping cream without any sugar, melt white chocolate chips, and in a bowl ( not in a mixer) combine them together slowly with a spoon. Don’t over mix it as it could separate.

Or whip some whipping cream with sugar.

Pour the pumpkin cheesecake filling over the graham crust layer, and top it with the white chocolate whipped cream. Decorate with a Halloween cupcake topper, and enjoy!

Blubbery lemon ice cream

It had to happen, I just had to try making ice cream again, and what I came up with are these blueberry lemon ice cream! I think that making my own ice cream is my new addiction, right next to coffee and Netflix! Because whipping this up was so easy, and it turned out so good, I figured I should share the recipe with you as well!

And you know how blueberry lemon muffins are delicious? Now imagine more creamy and refreshing version, and what you have are these blubbery lemon ice cream.

This time it was my two and a half-year old Rose who was helping me making these, and I must tell you, she did enjoy all the mixing and the licking it involved!

So easy, no churn, and only four ingredients, this recipient will Shute be your new summer favourite! #summerfood #nochurn #icecream

Hers what you’ll need:

1 cup whipping cream
1 tablespoon sugar
1 can sweetened condensed milk
2 cups blueberries ( plus 1/2 cup for decorating)
1 teaspoon of peeled lemon

First whip up your cream with sugar. Second, mash the blueberries with the hand mixer. Set them aside. Now, mix gently the whipped cream with the condensed milk: that’s your toddlers job! Add the mashed blueberries and the lemon peel. Mix together. Pour in to your freezer friendly dish of choice. Put in the freezer fir at meat 30 minutes before adding blueberries on top ( otherwise they’ll sink) and freeze fir another 6 hours before serving.
