Blubbery lemon ice cream
It had to happen, I just had to try making ice cream again, and what I came up with are these blueberry lemon ice cream! I think that making my own ice cream is my new addiction, right next to coffee and Netflix! Because whipping this up was so easy, and it turned out so good, I figured I should share the recipe with you as well!
And you know how blueberry lemon muffins are delicious? Now imagine more creamy and refreshing version, and what you have are these blubbery lemon ice cream.
This time it was my two and a half-year old Rose who was helping me making these, and I must tell you, she did enjoy all the mixing and the licking it involved!
Hers what you’ll need:
1 cup whipping cream
1 tablespoon sugar
1 can sweetened condensed milk
2 cups blueberries ( plus 1/2 cup for decorating)
1 teaspoon of peeled lemon
First whip up your cream with sugar. Second, mash the blueberries with the hand mixer. Set them aside. Now, mix gently the whipped cream with the condensed milk: that’s your toddlers job! Add the mashed blueberries and the lemon peel. Mix together. Pour in to your freezer friendly dish of choice. Put in the freezer fir at meat 30 minutes before adding blueberries on top ( otherwise they’ll sink) and freeze fir another 6 hours before serving.
