Kale & tomato cheesy quiche

I’m a huge kale fun, it’s so crunchy and full of character, and since it cooks so well, it’s a great replacement for spinach. If you don’t like the taste of it you can put it in a smoothie, but I think that with a bit of cheese and pastry it becomes the perfect winter comfort food !

Kale is super healthy and it boost your immune system, so it’s worth incomporating it in to your winter diet. And because cheese, eggs and milk are sources of calcium, and tomato is full of potassium and vitamin C, this kale & tomato cheesy quiche is a perfect, nutritious weekday dinner! If you’ll use ready made pastry it’ll be ready in less than an hour, and it’ll require only 10 minutes of preparation :).

Ready made pastry
Bunch of kale
3 tomatoes
2 kinds of shredded cheese: cheddar and goat (or any other of your choice)1 cup.
4 eggs
1/4 cup milk
1/4 cup flour

Kale& tomato cheesy quiche

Mix eggs with milk and cheese, add salt, pepper and slowly flour. Set aside.
Cut kale, and stir fry it on medium heat with olive oil, until it looses a bit it’s volume. About 4 minutes should do.

Add kale to your egg mixture. Cut tomatoes in slices, and place some on the bottom of your pastry dish, than pour the egg mixture on top. Add some more tomato slices on top, sprinkle them with olive oil, and bake it all on 350F for around 45 minutes.

Serve hot or cold, with a cup of hot soup or with a small salad. Bonne appetite!

Simple and delicious Parmesan & leek quiche


Here is another’s recipe for a no fail weekday vegetarian dinner. Takes no more than 10 minutes of preparation, and around 45 minutes of baking ; great when it’s still warm , amazing when cooled down. And even thought full of comforting cheesy flavour , it’s still a quite healthy dinner option. However I must admit that I made it with a store bought pie crust, and I’m not really proud of that.. But it does speed things up!

Frozen pie crust

5 eggs
1/4 cup milk
1 teaspoon Dijon mustard
2 tablespoons flour

1 big leek
1 cup of shredded cheese ( half cheddar, half Parmesan )

In a bowl whisk together eggs, milk, mustard , salt &pepper. Add slowly flour and make sure it blends well with the rest of your mixture. Add leek cut in to little round pieces and cheese, and pour in to crust. Bake on 400F for around 45 minute. Serve with a simple salad and enjoy your evening 🙂 .


Simple cheese and tomato Quiche


Looking for a simple, fast, and yummy week dinner idea? Do you have eggs, milk, cheese and some pie shells? Then you are ready for a quiche :). Imagination is the limit, you can add whatever you fancy. I did mine with some yellow bell peppers, European salami ans tomatoes. And my family loved it. If you add a simple salad on the side, your dinner is done.

5 eggs
1/3 cup of milk
2 teaspoons of flour
pinch of salt
1 cup cheddar cheese
1/2 cup of cut salami ( optional)

1 large bell pepper cut in stripes
1 large tomato

pie shell

Mix milk, eggs, flour, salt and cheese. Place pepper stripes on the bottom of your shell, pour the liquid egg mix, place tomato slices on top, and let bake for around 45 min on 350 F.
