Easy creamy Parmesan chicken pasta

this amazing pasta dish is perfect for a busy weeknight dinner, as it's so fast to put together!  Creamy, garlicky and cheesy, will satisfy everyone around the table! #pasta #easydinner

I’m so happy that the weather is finally cooling down, as it lets me cook more, and enjoy the comfort food once again! And this easy creamy Parmesan chicken pasta, is so good, that you’ll want to make it over and over again!

And, since it’s full of fresh tomatoes and peppers, it’s actually on the healthy side! Also, you can make this dish even easier, by using some ready grilled, or baked chicken. If you do so, it’ll be on the table within 30 minutes, promise!

So no surprise, that this creamy pasta is one of my kids favorite dish, they like it so much that they somehow forget all the bell peepers that usually they are not that crazy about, and eat them too !

What you’ll need:

1 cup of cooked or grilled chicken in cubes
3 large fresh tomatoes / or 1 cup of canned diced tomatoes
2 large red and green bell peppers
2 garlic cloves
1/4 cup green olives

1 cup cooking cream

1/4 cup grated Parmesan cheese

1 package of spaghetti or linguine pasta

fresh parsley

Cook pasta. Cut peppers in stripes, and tomatoes in cubes. Start by cooking the peppers on olive oil for around 5 minutes, then add the tomatoes and pressed garlic. After another 5 minutes add olives cut in pieces and cooking cream. Let it simmer for 3 to 4 minutes, and add cooked chicken cubes, and Parmesan cheese. Let it simmer a bit, and serve!

So let me tell you one thing about this strawberry chicken protein salad: its delicious. Oh, and filling too. Also, its my family’s new favourite. Even my kids get exited when I say it’s a salad for dinner type of evening now! Because when you mix fresh spinach with garden veggies, strawberries, nuts and grilled chicken breast, then I assure you its pure perfection!

You can either use a freshly grilled chicken, or you can use leftover one, hot or warm, it’s delicious either way. And as for the dressing this salad would be delicious with a lemon poppy-seed dressing or simple olive oil and balsamic vinegar mix. However I went for my favourite maple syrup dressing!

What you’ll need:

For the salad:

2 1/2 cup fresh spinach leaves
1 cup cut tomatoes
1 cup cut cucumbers
1 avocado
1 cup cut strawberries
1/2 cup almonds and pistachios mix
1 grilled chicken breast cut in stripes

For the dressing:

1/2 cup olive oil
1/4 cup lemon juice
1 teaspoon maple syrup
1/2 teaspoon Dijon mustard

In a bowl layer spinach, with tomatoes, cucumbers, avocado and strawberries. Add chicken and sprinkle with nuts. Pour the dressing once it’s ready to serve.

Tip: if you’re having problems convincing your kids to eat salads, invite them to help you with preparation. Toddlers can wash the greens, while preschoolers and older kids can help you cut and mix. It always works with my girls!


Apple chicken roast

This apple chicken roast is so simple to prepare yet so delicious and comforting. It's my family's all time fauvrire recipie.

The apple chicken roast is an all time favourite of my family. Especially in the fall when everyone feel like comfort food all of the sudden. And you know why everyone loves this recipe? Because this apple roasted chicken, is juicy, tender and a bit sweet, thanks to the apples and maple sirup in which it’s slowly roasted.

I know, a chicken roast is a fall classic, especially served with potatoes carrots and peas. It does sound almost boring, doesn’t it? Well, I admit that it could be really uninteresting, if that wouldn’t be a chicken roasted in maple sirup, covered in apples and if the potatoes wouldn’t be spiced up with cumin seeds and chilli salt. See, now I’m talking!

I know you’ll love it! And the best part is that it’s really easy to prepare! All you need to do it toss together a couple of ingredient, and let the oven do the rest.

What you’ll need:

Apple roasted chicken :

One medium chicken ( can be flatted out)
3 big carrots
2 big apples

1 spoon butter
1 spoon olive oil
1 spoon maple sirup

Fresh rosemary

Cumin spiced potatoes:

Big yellow potatoes
Sea salt
Grounded chilli
Grounded cumin

Green peas ( fresh, or frozen or from the can)
Note: kids love green peas, even from the can.

Place your chicken in a big casserole , add carrots cut in long stripes, apples cut on fours, an pour over olive oil, maple sirup and add butter on top. Add a bit of salt and pepper, and bake on 400F for around 45 minutes, until golden. Add fresh rosemary near the end.

Chicken roast

Meanwhile prepare your potatoes : cut them in thick slices, and cook in boiling water until almost cooked through. Then move them to a small baking dish, sprinkle with salt, chilli and cumin, and mix them well with a bit of olive oil. Bake until golden.

Apple chicken roast

Serve chicken with the maple-apple sauce that has been created while roasting. Add carrots, any type of green peas and chilli- cumin potatoes. Dress it all up with a bit of rosemary, and enjoy your ultimately comforting apple chicken roast!

If you’re looking for new summer recipes, look no further, because this really is the best watermelon salsa chicken tacos ever! With the home made chicken marinade ( really simple) and refreshing watermelon, these healthy tacos will become your new summer favourites !

And isn’t the juicy watermelon with fresh chilies and cilantro the very quintessence of summer? Paired with freshly grilled chicken and ( if you’re as lucky as me here ) fresh salad from the garden, it’s really amazing!

So, let’s get started. First, the marinade. If you’re like me, and you’re usually buying the ready made marinades, then I won’t judge you. We’ve all been there. But since I started marinating my meat at home, I see it’s really easy, and my meat has more taste and much less added sugar and salt ( check the ingredient list on the bottle.. Scary right? )

Cilantro lime chicken marinade

This is for 4 chicken breast.

1 cup olive oil
Juice from 2 limes
1 tablespoon maple syrup
1 cup fresh cilantro
1 tablespoon fresh jalapeño pepper ( cut in tiny pieces)
A pinch of salt & pepper

Mix it all together, pour over chicken breast, and let marinate for at least 4 hours.

Grill your meat on the grill, and cut in stripes for the tacos.

While the chicken is on the grill, you can prepare your watermelon salsa.

Watermelon salsa

Watermelon salsa:

1 cup of small watermelon cubes
1/4 cup of fresh cilantro
1/2 tablespoon of fresh jalapeño ( cut in tiny pieces)

Mix it all up and set aside for a bit ( 10 minutes will do).

When the chicken is grilled, and the salsa is ready, just add some fresh lettuce and your favourite shredded cheese, and enjoy!

Simplefied chicken cacciatore


Here is an all time favorite of mine but in a simpler then the classic version. My family loved this jusy , fresh and flavourful dinner, and I’m sure you’ll love it too !

2 chicken breast
2 onions
1/2 cup of mushrooms
1big can of hole Italian tomatoes
Fresh thyme
Fresh parsley
1 cup of white wine
3 garlic cloves
Kalamata olives
Olive oil

Cook chicken cut in cubes, on olive oil until golden, then set it aside. Now cook onions cut in stripes,when golden add mushrooms, and after around 3 minutes garlic, and then vine. Let it cook for couple of minutes, and then add tomatoes, chicken and thyme. Let it mingle for around 20 minutes on low heat. Before serving add olives and parsley. You can serve it like me with fresh and crunchy bread, or with pasta. Both ways it’ll be delicious !

Rosemary and cherry tomatoes summer chicken toss


I just love to use fresh veggies from the market Jean Talon, where a basket full of bell peppers you can get for 3 dollars, and it’s grown here in my province by this nice old man that’s selling me these on weekend.Or at least I hope so. So what am I going to do with a basket full of nice peppers, zucchinis and cherry tomatoes? An easy toss bien sûre !

Bell peppers
Cherry tomatoes
fresh rosemary
olive oil
2 chicken breast

Cut all the veggies, in big pieces.No need to over do it.Toss them around chicken breasts.Mix some crushed garlic with olive oil salt and pepper. Pour all over.Put fresh rosemary on top. Bake around 40 min on 350 F.
