The apple chicken roast is an all time favourite of my family. Especially in the fall when everyone feel like comfort food all of the sudden. And you know why everyone loves this recipe? Because this apple roasted chicken, is juicy, tender and a bit sweet, thanks to the apples and maple sirup in which it’s slowly roasted.
I know, a chicken roast is a fall classic, especially served with potatoes carrots and peas. It does sound almost boring, doesn’t it? Well, I admit that it could be really uninteresting, if that wouldn’t be a chicken roasted in maple sirup, covered in apples and if the potatoes wouldn’t be spiced up with cumin seeds and chilli salt. See, now I’m talking!
I know you’ll love it! And the best part is that it’s really easy to prepare! All you need to do it toss together a couple of ingredient, and let the oven do the rest.
What you’ll need:
Apple roasted chicken :
One medium chicken ( can be flatted out)
3 big carrots
2 big apples
1 spoon butter
1 spoon olive oil
1 spoon maple sirup
Cumin spiced potatoes:
Big yellow potatoes
Green peas ( fresh, or frozen or from the can)
Note: kids love green peas, even from the can.
Place your chicken in a big casserole , add carrots cut in long stripes, apples cut on fours, an pour over olive oil, maple sirup and add butter on top. Add a bit of salt and pepper, and bake on 400F for around 45 minutes, until golden. Add fresh rosemary near the end.
Meanwhile prepare your potatoes : cut them in thick slices, and cook in boiling water until almost cooked through. Then move them to a small baking dish, sprinkle with salt, chilli and cumin, and mix them well with a bit of olive oil. Bake until golden.
Serve chicken with the maple-apple sauce that has been created while roasting. Add carrots, any type of green peas and chilli- cumin potatoes. Dress it all up with a bit of rosemary, and enjoy your ultimately comforting apple chicken roast!
