Easy creamy Parmesan chicken pasta

this amazing pasta dish is perfect for a busy weeknight dinner, as it's so fast to put together!  Creamy, garlicky and cheesy, will satisfy everyone around the table! #pasta #easydinner

I’m so happy that the weather is finally cooling down, as it lets me cook more, and enjoy the comfort food once again! And this easy creamy Parmesan chicken pasta, is so good, that you’ll want to make it over and over again!

And, since it’s full of fresh tomatoes and peppers, it’s actually on the healthy side! Also, you can make this dish even easier, by using some ready grilled, or baked chicken. If you do so, it’ll be on the table within 30 minutes, promise!

So no surprise, that this creamy pasta is one of my kids favorite dish, they like it so much that they somehow forget all the bell peepers that usually they are not that crazy about, and eat them too !

What you’ll need:

1 cup of cooked or grilled chicken in cubes
3 large fresh tomatoes / or 1 cup of canned diced tomatoes
2 large red and green bell peppers
2 garlic cloves
1/4 cup green olives

1 cup cooking cream

1/4 cup grated Parmesan cheese

1 package of spaghetti or linguine pasta

fresh parsley

Cook pasta. Cut peppers in stripes, and tomatoes in cubes. Start by cooking the peppers on olive oil for around 5 minutes, then add the tomatoes and pressed garlic. After another 5 minutes add olives cut in pieces and cooking cream. Let it simmer for 3 to 4 minutes, and add cooked chicken cubes, and Parmesan cheese. Let it simmer a bit, and serve!

Baked salmon and kale creamy pasta

This is the most delicious creamy salmon pasta ever! Also, it's really easy to make ! #pasta #salmon

While my kids love pasta and could eat all day, every day, I really love my greens! And so this baked salmon and kale creamy pasta is probably one of the most loved meals around here, perfectly marring together the oh-so-creamy pasta with the lovely green crunch!

Also, it’s a perfect busy weekday meal. I usually bake my salmon the night before, and then I put it all together in less then 30 minutes!

And while my kids are still not very keen on kale and leek alone, they’ll eat it if it’s a part of a delicious pasta.

Baked salmon and kale creamy pasta

What you,ll need:

1 package of spaghetti or linguine

1 big leek
kale (1 package of pre-washed kale, or a big bunch)
3 garlic cloves
1 cup cream
salt&pepper

salmon (a portion for two)
1/2 teaspoon olive oil
salt&pepper

Bake the salmon ( you could do it the night before, or you could even grill it), drizzled with olive oil, on 400F for around 20 minutes.

Cook pasta.

Over a big pan, heat olive oil, add leek cut in pieces, and cook it through. Add kale, and after around 3 minutes garlic. Add cream, and let it simmer on a low heat. Add salmon chunks, and pasta. Stir it all together and serve.

This creamy, cheesy garlic and herb pasta, is the best pasta recipe ever! The one that you'll want to make over and over again!

If I had to choose just one pasta recipe to make, that would be this Creamy, cheesy
garlic & herb pasta! It’s just so good! Really cheesy and creamy, with a strong garlic note, and a whole bunch of herb freshness! And, my secret ingredient: fennel!

Yes, fennel, once cooked, adds sweetness and taste to this pasta, and makes you feel like you’re actually serving some veggies on the table!

It’s a great simple meal, full of flavour and perfect for cold winter days. Or any day when you need a bowl of something wonderfully yummy and comforting.
And kids love it. Now, do you need any more reasons to give it a try?

Creamy pasta

What you’ll need:

Olive oil
1 fennel
1 can diced tomatoes
2/3 cup whipped cream cheese
1/2 cup cheddar
Salt & pepper

4 garlic cloves

1 cup fresh parsley

Cooked linguine for 4 people

Slice fennel, and cook it on olive oil until tender. Add diced tomatoes, salt and pepper, and let it simmer for around 15 minutes. Using a hand mixer, mix up until smooth. Turn the heat to low, and add cream cheese and cheddar cheese. Now add freshly crushed garlic, and let it simmer for a couple of minutes, until the cheese is completely incorporated to the sauce. Add pasta, mix it all together and serve.

At the very last-minute add fresh parsley: you want it to stay crunchy!

Now, if you’re a cheese lover, you might want to add some more shredded cheddar on top. Either way, enjoy your delicious dinner!

Mushroom & ricotta creamy green pasta

Mushroom & ricotta

If, like me, you’re tired of fancy and complicated holiday cooking, and you need something simple yet comforting, you’ll love this simple mushroom & ricotta creamy green pasta! It’s super fast, easy and satisfying ! Great choice for one of this nights when you don’t really feel like cooking but a frozen pizza is still out of the question.

Fettuccine pasta
1 cup cut mushrooms
1 cup baby spinach & arugula salad
1/2 cup ricotta cheese
Salt & pepper

Stir fry the mushrooms on olive oil until soft. Add ricotta cheese, salt and pepper. Mix with pasta and fresh greens. You can serve it with a cup of Chardonnay :).

Red pesto & leek cheesy vegetarian pasta

I’m always on a hunt for easy weekday pasta recipes, are you ? This one is ready in less than 20 minutes, and it has basically 3 main ingredients : red pesto, leek and gruyere ( or cheddar if you prefer). Yes, you can make your own red pesto, I’m sure it will be delicious :)! I bought mine. I’m convinced it’s pretty easy to make, all you need is sun dried tomatoes, olive oil, and Parmesan cheese.. But for now, I’m too lazy of a mom to try it. Maybe one day I’ll make one, and then I’ll try to convince you to never buy it again.. But for now just buy your red pesto, and spend this extra time with a cup of coffee (or tea, or wine ).. So coming back to this yummy red pesto & leek cheesy pasta, I’m sure you’ll love it! It’s a great busy evening recipe, and you can make it really healthy too, just use whole grain pasta and cut a bit on cheese ;)!

1 big leek
1 big onion
2 table spoons of red pesto
1 cup gruyere cheese (or cheddar )
Fresh basil

Cooked pasta

Cut onion and leek, and cook it on olive oil until semi transparent. Add red pesto and pasta, toss in the cheese, leave on medium hight for around 2 minutes, or until the cheese has melted. Serve with some fresh basil on top. That’s it. Super easy right? 🙂 yet so good ! I hope you’ll enjoy it :)!

Grilled peppers & halloumi cheese lemon linguini

The grilling season is starting slowly in Montreal. People usually inaugurate it with steaks and burgers, but in our household everyone loves grilled halloumi. Did you ever tried it ? Once grilled it’s crunchy on the outside and soft inside, salty and really, really delicious ! And tossed with grilled bell peppers, mushrooms and lemon linguini it’s honestly one of the best pasta recipes ever ! And so fast and easy !

Bell peppers
Mushrooms
Fresh basil

Lemon linguini
Olive oil

Cook your pasta, grill the cheese and peppers. Toss it all together with mushrooms , olive oil and fresh basil, and serve over pasta. Bonne appétit !
