Creamy, cheesy garlic & herb pasta
If I had to choose just one pasta recipe to make, that would be this Creamy, cheesy
garlic & herb pasta! It’s just so good! Really cheesy and creamy, with a strong garlic note, and a whole bunch of herb freshness! And, my secret ingredient: fennel!
Yes, fennel, once cooked, adds sweetness and taste to this pasta, and makes you feel like you’re actually serving some veggies on the table!
It’s a great simple meal, full of flavour and perfect for cold winter days. Or any day when you need a bowl of something wonderfully yummy and comforting.
And kids love it. Now, do you need any more reasons to give it a try?
What you’ll need:
Olive oil
1 fennel
1 can diced tomatoes
2/3 cup whipped cream cheese
1/2 cup cheddar
Salt & pepper
4 garlic cloves
1 cup fresh parsley
Cooked linguine for 4 people
Slice fennel, and cook it on olive oil until tender. Add diced tomatoes, salt and pepper, and let it simmer for around 15 minutes. Using a hand mixer, mix up until smooth. Turn the heat to low, and add cream cheese and cheddar cheese. Now add freshly crushed garlic, and let it simmer for a couple of minutes, until the cheese is completely incorporated to the sauce. Add pasta, mix it all together and serve.
At the very last-minute add fresh parsley: you want it to stay crunchy!
Now, if you’re a cheese lover, you might want to add some more shredded cheddar on top. Either way, enjoy your delicious dinner!
