If, like me, you’re tired of fancy and complicated holiday cooking, and you need something simple yet comforting, you’ll love this simple mushroom & ricotta creamy green pasta! It’s super fast, easy and satisfying ! Great choice for one of this nights when you don’t really feel like cooking but a frozen pizza is still out of the question.
1 cup cut mushrooms
1 cup baby spinach & arugula salad
1/2 cup ricotta cheese
Salt & pepper
Stir fry the mushrooms on olive oil until soft. Add ricotta cheese, salt and pepper. Mix with pasta and fresh greens. You can serve it with a cup of Chardonnay :).
