Who doesn’t like some delicious festive cookies to munch on, while dressing up the Christmas tree? Or organizing a cookie swap party? Or gifting friends and family with a batch of home-made goodness? Nobody, right? So today I have these Peppermint and White Chocolate Sugar Cookie recipe for you, perfect for all of the above! Although, it’s more of a cookie hack to be honest.

Of course, the best sort of cookies, are the ones that only grandma used to make – because of course noting is as good as an old family recipe passed through generations of passionate bakers!

Except, that we don’t always have time to make that big batch of perfect home-made cookies. All the cutting and baking is definitely fun, but sometimes between work and home it’s just not happening.

So with this cookie hack, nobody will know you didn’t actually bake these cookies. Or you can tell them the truth, and I’m sure everyone will still love these! Because these melting in your mouth shortbread cookies, mixed with sweetness of white chocolate and the crunch of the peppermint candy cane, are simply delicious!

And it’s a perfect treat for a snowy day, and one of my families favorite too. You can even involve the kids in making these, they’ll be great little helpers! My daughters loved dipping them in white chocolate and sneaking some right away!

Oh, and you can even prepare them ahead of time, and freeze them for up to a month!

If there where only one apple cake recipe I’d have to choose it would be this apple crumble coffee cake! It’s super moist, chock-full of walnuts and apple chunks, and generously finished with lovely crunchy oat crumble. And it’s a baking hack!

You see, when I was growing up in Poland, my grandmother used to bake this apple cake called “Sharlotka” or Charlotte, that would look and taste exactly like this cake here. Except that it would take her much more time to prepare!

And if you now me a bit, then you know that I really enjoy baking from scratch. It’s just that sometimes life, aka kids and work get between me and my hobby, and turn me towards a box cake!

Yes, I used a box cake to whip up this amazing cake, and I’m not afraid to admit it! And you too can prepare this cake in less than 10 minutes!

What you’ll need:

For the cake layer:

– 1 yellow box cake ( replace oil for melted butter and water for milk, quantities like on the box)

For the apple layer:

– 3 big apples cut in chunks
– 1/2 cup chopped walnuts
– 1 tablespoon brown sugar
– 1 tablespoon cinnamon

For the crumble:

– 1 cup quick oats
– 1/2 cup flour
– 1/2 cup brown sugar
– 1 table-spoon melted butter or margarine
– 1 teaspoon vanilla extract

Prepare the cake layer as on the package, just remember to replace the water by milk and the oil by butter.

Pour the batter in to the pan. ( But don’t pour all of your cake batter, since there needs to be place left for apples and crumble. I used one round cake pan and two mini ones for this recipe.)

Mix apple pieces (no need for perfect cubes) with walnuts, cinnamon and brown sugar. Pour the apple filing over the cake batter.

Mix the quick oats with flour, brown sugar, butter and vanilla extract, and sprinkle the apples with the crumble.

Bake as indicated on the box! ( Unless you’re using mini pans, then cut the time in half.)

Serve warm or cooled down. You can even add some vanilla ice cream on top, I promise it’s simply amazing together!

Pumpkin spice ice cream hack

I know that technically it’s already fall, and we should eat apple pies and forget about summer, but with the sunny weather outside, me and my family we’ll keep on eating ice cream! Because don’t tell me you wouldn’t like some pumpkin spice ice cream on a nice warm fall afternoon? Now me, I’m a huge fan of pumpkin spice ice cream but I never can find them in my local grocery store.

And since I’m hosting a play group for moms with kids every other week, I’m always on the look out for easy, and kid friendly ways to entertain. Because when hosting moms with kids in ages from one to six, I always need to take in consideration that everyone has different likes and dislikes! Some kids eat alone, and some still need a bit of help, some will love sweet snacks, and some eat only salty ones. But I found that serving ice cream on a sunny day (or frozen yogurt if you prefer) is one of the easiest ways for making everyone happy! Both the younger and older kids love them, I don’t have any preparation to do, and my mommy friends are always in need of a little pick-me-up.

Though I did found a hack to transform one plain vanilla ice cream in to four different yummy flavors, just in seconds. Because lest’s face it, usually everyone want’s different flavor anyway! It’s a simple hack,  but in all it’s simplicity it gets me my favorite pumpkin spice ice cream in seconds! And makes my play dates so much more fun and easy!

And so I got to try these genius SnoSpice – spices for Ice cream – that my family can’t get enough of! I have my pumpkin spice flavor – aka “Pumpkin Carriage” – that I love so much, kids devour the “Deep Chocolate Sea Salt”, while my fellow moms are loving the “Cinnamon for Optimists” and “Lemon + Basil” spiced ice cream!

And I believe that as busy moms, we all need life hacks to help us a bit. So I’ll be serving these spiced ice cream to my play group, because they make my play dates a bit more easier to prepare and a whole lot more fun!

3 minute apple crumble mug cake

3 minute apple crumble mug cake, so easy and delicious! if you have these simple ingredients, and a couple of spear minutes, you can have this cinnamon, walnut and apple, gooey and chewy mug of happiness!

This 3 minute apple crumble mug cake is one of my favorite things about fall! It smells amazing, is so gooey chewy and crunchy all at once, and is so easy to prepare! Really perfect for chilly afternoons and cold evenings!

And since apple baking is one of my favorite things, I’ve partnered up with my blogging mom tribe to share with you eight of our most loved fall apple recipes! Make sure to check them all in the end of this post!

So, coming back to my 3 minute apple crumble mug cake, if you have some simple ingredients on hand, and if you feel like treating yourself to a comforting fall staple, but don’t really feel like baking all that much, this recipe is all you need!

What you need:

– for the crumble –

1/4 cup margarine or butter (melted)
1/2 cup quick oats
2 tablespoons brown sugar
1 tablespoon vanilla essence

– for the filling –

2 apples cut in small cubes
1/4 cup graham crumbs
1/4 cup walnuts
1 tablespoon cinnamon
1 tablespoon flour
2 tablespoons brown sugar
a drop of lemon juice

Combine all of the crumble indigence together, and mix well. In a separate bowl mix the ingredients for the apple filling.

Divide the apple filling mixture among two mugs, and then top it with the crumble. Microwave each mug for 3 minutes separately. (Be careful, it’ll be very hot!)

Serve as it is, or add vanilla ice cream! ( I think it’s amazing with some vanilla ice cream!)

Tiramisu no churn ice cream

These are hands down, the best home made ice cream ever! Creamy and smooth, made with real mascarpone cheese and sprinkled with chock eye chips!

I guess it’s official now, I’m totally and completely addicted to making home-made ice cream, and these tiramisu no-churn ice cream are nothing short from perfection! And after making ice cream all summer long, I think that I should seriously consider openig an ice-cream boutique one day!

Especially since summer is slowly reaching towards the end, I thing it’s even more important than ever to make home-made ice cream and enjoy these last summer weeks! Because, you know, the winter is coming..


So if you like the creaminess of tiramisu, but aren’t a big fun of coffee flavor in your deserts, you’ll love this recipe. I used mascarpone and cocoa powder to bring a bit of the teramisu flavors, but I skipped coffee since my kids really wouldn’t appreciate it. However, if you do like it, just add a shooter of cold espresso, or a spoon of instant coffee to the recipe.

All you’ll need:

1 cup of whipping cream
1 cup of mascarpone cheese
1 cup of condensed milk
1 tablespoon of cocoa powder
chocolate chips

Whip the cream. Mix the whipped cream slowly with mascarpone cheese. Add condensed milk. mix it well together. Set half aside, and to the remaining half add cocoa powder, and mix it some more. Pour both mixtures in to a baking pan, sprinkle with chocolate chips, and freeze for at least 5 hours.

Enjoy ! I’m sure you’ll love it as much as we did!

Chocolate peanut healthy energy balls

These chocolate peanut energy balls are the perfect little bites to boost your energy and nourish your cravings. The best  chocolate peanut healthy energy balls out there!

Are these little bites of chocolate peanut energy balls packed with oatmeal, chia seeds and almond meal ? Yes! Are they amazingly chocolaty ? Yes! Are they full of natural peanut butter and healthy proteins ? Oh yes! Are they soft yet crunchy? Double yes!

I could probably go on and on about how I love having these energy balls on hand, but all I’ll say is that they are really on point. And yummy. And on the healthy side. And so easy to make! Ok, I’ll stop here, I promise!

But it’s all because, I was looking for a while now for a fun snack that I could make with my kids. Because I want to involve them in the kitchen, so they’ll cook me dinner in a couple of years (that’s why!)Also, this mama is snaking a bit too much lately, and figured it’s about time to get it done right!

What you’ll need:

– 2/3 cup natural, unsweetened peanut butter

– 1/4 cup honey

– 1 tablespoon maple syrup

– 1 cup oats

– 1/2 cup almond-meal

– 1/4 cup dark chocolate chips

– 1/4 cup chia seeds

Combine it all together in a bowl. If it’s too dry, and doesn’t want to stick together add some peanut butter. If it’s too dry add a bit of oats. When all is well mixed, using your hands, roll little balls out of it, or better, let your kids do this! Refrigerate for around 30 minutes before serving. You can even freeze some for later!

You could even add some cranberries in stead of chocolate! Or nuts! I’m sure it would be delicious ( actually now when I think about it, I think I’ll have to make a new version soon!) Either way, my family really enjoyed this healthy snack, and I’m sure yours will also love it!
