The best ice cream I ever had in my entire life and only three ingredients so needed!

If you like raspberries and if you like ice cream, then I assure you that this is the desert of your dreams! It’s amazing! And it’s so easy to make that my four-year old daughter Lili can show you how to do it! Also, it’s a no-churn recipe, so it basically means that you don’t have to buy ice cream ever again!

And the best part? It’s delicious, and so versatile! If you want, you can replace raspberries with chocolate, or strawberries, or bananas, or whatever it is that you like in your ice cream!

What you’ll need:

1 cup whipping cream
1 can condensed milk
2 cups raspberries

It’s as easy as smashing, mixing and freezing, so allow me to introduce you Lili, making ice cream for us:

Whip the cream and mix it up with the rest:

Mix it all together, add some more raspberries on top and restrain yourself from eating it all now! Freeze overnight, and voila, the easiest, most delicious ice cream ever!

I know I’ll be experimenting with more textures and flavors, but for now, excuse me while I’ll devour my portion!

This easy and healthy breakfast can be prepared overnight, and enjoyed even on the busiest of mornings! You really need to try this oatmeal blueberry smoothe!

My kids love oatmeal and smoothies, and I love easy and no fuss recipes: so it was only natural that I’d finally try the oatmeal smoothies! It’s a perfect warm weather breakfast, combining the healthy benefits of oats and fruits with the refreshing yumminess of a smoothie!

The secret is to combine just the right amount of plain overnight oatmeal with your favourite fruits and yoghurt, and to blend it all really well together right before serving!

Best part: most of the preparation happens in the evening, and all what’s left for you to do, is to mix it in a blender!

What you’ll need:

Overnight oats:
1 cup oats
2 cups milk ( regular, soya or almond)

Mix together on a mason jar, and leave overnight in the fridge.

1 cup overnight oats
1 cup yoghurt
1 cup blueberries and raspberries (half in half)

Mix together the overnight oatmeal with fruits and yoghurt in a blender, and enjoy your morning oatmeal blubbery smoothie!

It’s a such an easy recipe, and yet makes a great difference in our morning routine! This simple chocolate cheesecake crumble is so yummy yet very easy to make

If you know me a little, then you know that I love chocolate cheesecake. Unfortunate, my hubby doesn’t. And being reasonable like I am I’m trying to be, I just can’t make a dessert that only me and the kids will eat. But my hubby do loves crumble. So here comes the chocolate cheesecake crumble! A wonderfully delicious hybrid. Also, it’s a bit of a kitchen hack. Because, unlike most of my cooking, this recipe involves some serious shortcuts!

Chocolate cheesecake crumble

So. If you’re deadly for this chocolate, creamy, and crunchy food experience, hers what you’ll need :

1 pie crust

3 cream cheese packages (room temperature)
3/4 cup sugar
3 eggs
1/2 chocolate pudding mix (like Shriff)
1 tablespoon cocoa

1 cup quick oats
1/3 cup brown sugar
1 tablespoon soft butter
1 tablespoon cocoa

Mix together soft cream cheese, with sugar , eggs, cocoa and chocolate pudding ( half of the package mixed with 1 and 1/2 cups of water), on low-speed until blended. Bake on 325 F for around 45-50 minutes. You don’t want to over bake it!

Combine separately crumble ingredients, and keep aside. Sprinkle on top of your cheesecake, halfway through its baking time.

Let it cool, and enjoy! For extra yumminess you can serve it with vanilla ice cream!

Doughnut plum cake

This plum cake tastes just like a doughnut with jam,

I always make one plum cake in the fall, and this year you got really lucky, because this doughnut plum cake tastes just like a delicious vanilla doughnut with some home-made jam! But it’s not fried, and nobody spend hours making the jam!

I played a bit with a classical polish plum cake, and with all the humbleness possible, I think that I invented something amazing. Although if you’re looking for 100% healthy recipe then this might not be it. But it is home-made, and it features a fruit, so lest say that it’s just fine, ok?

What you’ll need:

1 1/2 cup flour
1 1/4 tsp baking powder
1 cup sugar
Pinch of salt

3 eggs
1/4 cup milk
1/4 cup melted butter
1/4 cup avocado oil ( or just a total of 1/2 cup butter)
1/2 tsp vanilla essence

Around 6 plums cut in half

Cream the butter, avocado oil and sugar together, add flour, baking powder,vanilla essence, salt, and eggs. Beat well until smooth. Pour in to a baking pan, and then place the plums cut-side down. Sprinkle it with a bit of sugar and cinnamon and bake for around 45 minutes on 350F

Let your doughnut plum cake cool down a little, and then dust it evenly with icing sugar and sprinkles ( I believe in a simple rule: the more the better)

Now remember, that this doughnut plum cake wasn’t fried like real doughnuts are, so you can have a double portion! Enjoy!

If a French tart would fall in love with an American cheesecake then this no bake summer tart would be their baby. It has a sponge cake base and loads of fruits, just like French fruit tart, but instead of fancy and long to make pastry cream, it has this delicious, creamy, whipped cream cheese filling.

Every time we go to France I indulge in their fruit tarts, and every time the summer comes I feel like I need to make one on my own. But I am a busy lazy mom, so sometimes making the sponge cake and the pastry cream from scratch, when you have two kids who refuse to play alone, is a bit challenging! That’s why this simplified recipe is so great. By using a ready made cake base, you’re really saving time, and the whipped cream cheese filling is really fast to make. But overall it is a home made fruit dessert, so I can still feel like I’m feeding my family with fresh and healthy (almost) food!

1/2 cup whipping cream
1 packet of soft cream cheese
1/4 cup sugar
1 teaspoon vanilla extract

Sponge cake base

1 cup raspberries
1 cup blueberries
1 pear

Whip the cream with sugar, and when it’s really whipped well, add slowly cream cheese ( by a spoonful) and vanilla. Mix it together until really smooth and really fluffy.

Peanut butter and chocolate chip cookie bars

Peanut butter & chocolate chip cookie bars

When I need something comforting, I make these peanut butter and chocolate chip cookie bars. They are soft, moist and so satisfying. And since I switched to natural & no sugar & no fat added peanut butter, it also feels like they are a healthy snack :).

And believe me when I say that these yummy bars take less than a half an hour to make! Isn’t it funny, how a half an hour of baking seems to go by really fast, while a half an hour of folding laundry feels like an eternity.. (If you don’t feel the same,and you love folding laundry, good for you! ).

Coming back to these amazing peanut butter and chocolate chip cookie bars, I know you’ll love them! Here is what you’ll need :

1/2 cup melted butter
1 large egg
1/2 cup light brown sugar
1/4 cup granulated sugar
2/3 cup Natural Peanut Butter
1 1/4 cups all purpose flour
1/2 teaspoon baking powder
pinch salt
1//2 cup chocolate chips

Mix melted butter with the sugars and egg, and then add flour, baking powder and salt. When all is well mixed together add chocolate chips. Spread in a shallow baking dish and bake for around 25 minutes on 360 F, or until baked on the sides but still soft in the middle.

You can have your peanut butter and chocolate chip bars warm with a bit of vanilla ice cream.. Or you can wait until they cool down and then serve them as a perfect weekday dessert ( or snack, or breakfast.. I won’t judge you).
