If a French tart would fall in love with an American cheesecake then this no bake summer tart would be their baby. It has a sponge cake base and loads of fruits, just like French fruit tart, but instead of fancy and long to make pastry cream, it has this delicious, creamy, whipped cream cheese filling.

Every time we go to France I indulge in their fruit tarts, and every time the summer comes I feel like I need to make one on my own. But I am a busy lazy mom, so sometimes making the sponge cake and the pastry cream from scratch, when you have two kids who refuse to play alone, is a bit challenging! That’s why this simplified recipe is so great. By using a ready made cake base, you’re really saving time, and the whipped cream cheese filling is really fast to make. But overall it is a home made fruit dessert, so I can still feel like I’m feeding my family with fresh and healthy (almost) food!

1/2 cup whipping cream
1 packet of soft cream cheese
1/4 cup sugar
1 teaspoon vanilla extract

Sponge cake base

1 cup raspberries
1 cup blueberries
1 pear

Whip the cream with sugar, and when it’s really whipped well, add slowly cream cheese ( by a spoonful) and vanilla. Mix it together until really smooth and really fluffy.

Spread your whipped cream cheese filling inside your cake base.

And add fruits. The more the better!

Now let it chill in the fridge for at least and hour.
