Sweet potato and beans vegetarian tacos
Everyone loves tacos, but now everyone is crazy about a vegetarian dinner! Well, these sweet potato and beans vegetarian tacos are so full of flavor that even the meat lover will be pleased! And they make a perfect busy weekday night dinner, with almost no cooking required!
When I first tried them, I was struggling with my vegetarian dinners: I was just starting my 3-times-a-week-veggie-night-plan, and I was stuck on meatless pasta that would usually find us hungry after an hour or two. That’s when I started to cook more with beans, chickpeas and quinoa. And I realized that if you mix any of the above with a bit of grains, and a bit of cheese, then you have just enough energy and protein to keep everyone going!
What you’ll need:
2 big sweet potatoes cut in cubes
1 cup cups of red or black beans ( or both)
1 cup of corn
1/4 cup feta cheese
avocado ( optional)
whole wheat tortillas
1 lime
1/2 cup of fresh cilantro
1/2 teaspoon of fresh cumin seeds (grounded)
1/4 teaspoon of powdered chili
1/2 tablespoon avocado oil
salt & pepper
shredded cheese
Cook the sweet potato, and let it cool a bit. Mix with beans and corn. Set aside. Now mix the juice from one lime with avocado oil, spices and fresh cilantro. Pour it over your veggies. Add feta cheese ( I promise, it works great!) You can add avocado if you’d like. ( I simply forgot about it, but lest’s keep it a secret from my kids!)
Arrange the veggies, shredded cheese , warmed up tortillas and more fresh cilantro on the table, and let everyone serve themselves!
