Perfect summer series : strawberry cloud cheesecake
I might be slightly addicted to cheesecake, and when you’ll try this strawberry cloud cheesecake I’m sure you’ll be too. It’s so delicate, fluffy, rich and full of flavour ( now you now where the name is coming from)! And it’s so easy to make. After we went strawberry picking it was just logical to make this strawberry packed, quintessence of summer!
And did I mention that it’s a no bake dessert? Made with Mascarpone cheese? Yes, it is heavenly perfect. Yes, you do need to make one.
Graham crackers crumbs
Melted butter
2 cups mascarpone
1 cup whipping cream
1/3 cup sugar
2 cups fresh strawberries
Prepare a graham crackers crust, and don’t bake it! In stead, put in in the fridge for 15 minutes.
Whip cream with sugar. Add slowly the mascarpone cheese. Whip it some more.
Then wash strawberries, and put 1/2 cup of them on the side ( for decoration). Crush the remaining strawberries in to a strawberry sauce ( I use my hand mixer). Then add it slowly to your whipped mascarpone, and mix it well.
Pour it over your crust, and put back in the fridge. Let it cool for at least 30 minutes before putting strawberries on top.
